Spontané: Framboise - More than 700 pounds of raspberries were added to a blend of 18 month old spontaneously-fermented wild ales, resulting in a funky, sour, jammy, truly wild ale. Spontané Framboise pours deep red, smells of spring and tastes like you’re biting into a freshly picked raspberry.
Spontané: Bramble - This single-year blend of our first 100 percent spontaneously fermented wild ale was inoculated overnight in our custom-made coolship and then fermented on blackberries, cherries, and boysenberries. The truly wild ale was refermented in the bottle and has notes of dark currants and fresh berries with a strong base of barnyard funk.
Fragaria Hibiscus - Our base golden sour was aged in red wine barrels for 18 months and refermented on strawberries and hibiscus to create a wonderfully complex fruited sour. Fragaria Hibiscus has a subtle tartness and floral notes on top of layers of funk and fresh fruit flavor.
