Join Wild Mind at the 19th Annual Winterfest on Friday, January 25 at Union Depot in Saint Paul, MN. Organized by the Minnesota Craft Brewers Guild, Winterfest is one of the premier beer festivals in the state.
This year at Winterfest, each brewery has a specially prepared food dish to pair with their beer, and we have the pleasure of sharing a booth with Funky Grits and will be pouring alongside Bauhaus Brew Labs, Fair State Brewing Co-Op, and Klockow Brewing. Funky Grits will be serving up aged cheddar grits with slow-braised beef, horseradish sour cream, and jalapeño.
To pair with this spicy bite, make sure you grab some Spontané 2018, our spontaneously inoculated, barrel-fermented sour. The acidity of the wild ale will provide an enticing contrast to the richness of the grits and meat, while accentuating the heat of the horseradish and jalapeño.
We’ve got two beers to pour for you at Winterfest 2019:
Spontané 2018 - Spontaneous Wild Ale - A blend of one- and two-year-old spontaneously-fermented wild ales that were brewed using our custom-built coolship to collect plenty of funk and microflora. After aging in barrels and foeders, beers were selected from several different batches to create a complementary blend of funk, acid, and tartness. The blended sour was then refermented in the bottle to help round-out this complex, truly spontaneous ale.
Never Enough - Hazy IPA - When is there enough stuff in your IPA? Clearly never. Brewed with flaked rice, malted oats, lactose, apricot puree, coconut, AND vanilla beans with whirlpool and dry hop additions of Centennial, Citra, and Amarillo hops, Never Enough has it all. The rich and creamy body pairs beautifully with the tropical and stone fruit flavor and wraps up with a decadent coconut finish. It’s not enough, but it’s close.
